As well as cultivating seaweed in laboratories and researching the carbon sequestering potential of seaweed farms, $BEACH partner PEBL has been creating some delicious seaweed recipes to promote this ocean-friendly food.
Kelp grows fast and is easy to grow. But the value of kelp is only 2–3 pounds per kilo, meaning profit margins are slim. Red seaweeds, such as lava which wraps around sushi, or dulse, sell at closer to 6–8 pounds per kilo. But no-one has cracked a method for how to successfully cultivate it…yet.
Dulse is a delicious and highly nutritious sea vegetable. Its salty flavor and crispy texture make it an excellent substitute for bacon in a BLT sandwich, with much less sodium and fat than the “real” thing.
Recipe: Dry fry the dehydrated dulse in a skillet with a very slight brush of olive oil over medium heat for 2–3 minutes. Toss the dried dulse until the leaves turn greenish — don’t let it go black which means you’ve burnt it!
Meanwhile, toast the bread, slice the tomato and shred the lettuce. Spread bread with vegenaise, and top with dulse, lettuce, and tomato. Season with salt and pepper and it’s ready to go!
Right now dulse is only harvested from wild populations in the UK. Whilst this can be done without harm on a small scale it is not a viable way to bring this nutritious food to everyone’s plate. That is $BEACH partner PEBL is developing a method to cultivate dulse in a way that is scalable and does not impact our wild habitats.
